Fish with Spring Onions & Ginger Recipe

fish spring onions ginger dish

This zingy Asian fish with spring onions and ginger recipe is a little different from the dishes that generally come out of my kitchen.  That doesn’t stop it from being oh-so simple to cook and absolutely delicious, though. Enjoy!

Ingredients

You will need:

  • 4 fillets of fish (I prefer white fish)
  • 3 tbs or more of finely sliced ginger
  • 4 tbs or more of finely sliced spring onions or cebollitas
  • 1-2 fistfuls of wilted spinach
  • 4-6 tbs of LIGHT soy sauce
  • 3-4 tbs of water
  • Brown rice (or rice noodles)

Cooking instructions

How to make the dish:

  1. Scatter ginger and onions on the bottom of an oven-proof dish
  2. Place fish on top and pour over soy sauce
  3. Scatter remaining vegetables on top
  4. Grill or bake until fish is cooked through
  5. Serve in a bowl on top of wilted spinach and brown rice or with okra and rice noodles
  6. Sprinkle with fresh coriander
  7. Fresh chilli could be an optional extra
  8. Accompany with a glass of chilled Fino
